I've been dairy free for a while and have become quite used to the lifestyle. I fully admit that I've broken the rules and eaten a pizza every once in a while, but I've been good about adhering to the diet. However, recently I started to become sick with absolutely everything I was eating: apples, chicken nuggets, almond milk, cereal. It literally didn't matter what it was, I got sick. Finally, I headed to the doctor's and they told me I had to eat a strictly gluten and dairy free diet--not even milk as an ingredient in something. They did a few tests and VOILA! There the allergy was: gluten. I was pretty much devastated when I went home, I mean what the hell was I supposed to eat? Luckily enough, one of my friends told me that her brother was GF and she knew a lot of good products. At that point, I was about ready to kiss her feet!
Since I'm a college student, I have a meal plan. I was pretty sure that I'd be left high and dry when it came to the dining services, but I was really surprised. One of the traditions places on campus is incredibly conscious of food allergies. The first time that I walked in there and informed them of my recent discovery, they whipped me into the back room, had me fill out a sheet of what I can and can't have and informed everyone on staff of it. Since there are about 15 kids on campus like me, they know us all and what our dietary restrictions are, so I can literally just ask one of them whether or not I can consume something. The staff is wonderful, but let's be serious, how many chicken breasts, plain burger patties or gluten free pasta with red sauce can one really consume without going insane? Well, I can tell you about 3 months worth.
This blog is my way of telling anyone who has a similar situation about what food is absolutely fantastic and what fails miserably.
